# What You’ll Need:

→ Dry Spices & Herbs

01 - 2 tbsp nutritional yeast flakes
02 - 1 tbsp garlic powder
03 - 1 tbsp onion powder
04 - 1½ tsp dried thyme
05 - 1½ tsp dried sage
06 - 1 tsp smoked paprika
07 - 1 tsp ground turmeric
08 - 1 tsp dried parsley
09 - 1 tsp celery salt
10 - ½ tsp ground black pepper
11 - ½ tsp dried rosemary, crushed
12 - ½ tsp ground white pepper
13 - ¼ tsp ground coriander
14 - ¼ tsp ground marjoram
15 - ¼ tsp ground mustard

# How To Make It:

01 - In a small mixing bowl, add the nutritional yeast flakes, garlic powder, onion powder, dried thyme, dried sage, smoked paprika, ground turmeric, dried parsley, celery salt, ground black pepper, crushed dried rosemary, ground white pepper, ground coriander, ground marjoram, and ground mustard.
02 - Stir or whisk all the spices and herbs together until the mixture is uniform in color and texture, with no clumps remaining.
03 - Transfer the blended seasoning to an airtight jar or container. Keep it stored away from direct light and heat. The blend will maintain peak flavor for up to 6 months.
04 - To use as a rub, sprinkle the seasoning generously over plant-based proteins such as tofu, tempeh, or seitan. Massage it in evenly before grilling or roasting.
05 - To use as a marinade, whisk 1 to 2 tbsp of the seasoning blend with ¼ cup olive oil and 2 tbsp fresh lemon juice. Coat your chosen ingredients and let them marinate for at least 30 minutes before cooking.
06 - To prepare a quick broth, stir 1 tbsp of the seasoning into 2 cups of hot water. Adjust the amount to taste depending on the desired intensity.

# Expert Tips:

01 -
  • It transforms plain tofu or tempeh into something that tastes deeply seasoned and satisfying without any animal products.
  • You probably have most of these spices in your pantry right now, which means dinner is about to get a serious upgrade.
02 -
  • Old spices will taste flat and dusty, so if your thyme has been sitting open for two years, start fresh or the whole blend will suffer.
  • Nutritional yeast can clump during storage, so give the jar a shake or a quick stir before each use to redistribute everything evenly.
03 -
  • Toast the blend in a dry skillet for thirty seconds before using it as a rub, and the aromatics will bloom into something dramatically more fragrant.
  • Write the date on the jar with a marker so you know when six months have passed and it is time to make a fresh batch.
