Pie Iron Pizza Pockets (Printable)

Golden, cheese-filled pie iron pockets with sauce and toppings, cooked over a campfire in about 18 minutes.

# What You’ll Need:

→ Bread

01 - 8 slices white or whole wheat sandwich bread

→ Sauce & Cheese

02 - 1/2 cup pizza sauce
03 - 1 cup shredded mozzarella cheese

→ Toppings

04 - 12 to 16 slices pepperoni or salami (optional)
05 - 1/4 cup sliced black olives
06 - 1/4 cup diced bell peppers
07 - 1/4 cup sliced mushrooms
08 - 1/4 teaspoon dried Italian herbs (optional)

→ For Brushing

09 - 2 tablespoons butter, melted

# How To Make It:

01 - Preheat the pie iron over a campfire or stovetop for 2 to 3 minutes.
02 - Brush one side of each bread slice with melted butter. Place 4 slices, buttered side down, on a clean surface.
03 - Evenly spread 2 tablespoons of pizza sauce on each prepared bread slice. Top with shredded mozzarella and selected toppings. Sprinkle dried Italian herbs if desired.
04 - Top each with a second slice of bread, buttered side facing up.
05 - Carefully place each sandwich into the preheated pie iron. Close and latch. Trim any excess bread extending beyond the iron’s edge.
06 - Hold closed pie iron over medium campfire heat for 3 to 4 minutes per side, until bread is golden brown and cheese has melted.
07 - Remove pockets from pie iron with heat-resistant tongs. Allow to cool slightly before serving.

# Expert Tips:

01 -
  • You get that unbeatable campfire crisp on your pizza, while the inside stays irresistibly melty.
  • Everyone can customize their pocket, so picky eaters (and adventurous ones) all leave happy.
02 -
  • If you rush, you’ll scorch the bread before the cheese melts—keep the heat moderate and be patient.
  • Cleaning the pie iron right after use is a lifesaver; cheese stuck in crevices will haunt you otherwise.
03 -
  • Toast the pie iron empty for a minute first—it helps prevent the bread from sticking at the start.
  • Don’t overfill; a tidy pocket might not look impressive going in, but it’ll win out when you don’t have to scrape cheese off the camp chair later.
