02 - Evenly spread 1/4 cup hummus over the entire surface of the tortilla, reaching all the way to the edges.
03 - Arrange a single layer of julienned carrot, sliced red bell pepper, cucumber strips, baby spinach, shredded cabbage, and chopped parsley horizontally across the lower third of the tortilla.
04 - Starting from the edge closest to the vegetables, tightly roll the tortilla into a firm log, securing the filling inside.
05 - Repeat the spreading, layering, and rolling process with the remaining tortillas and ingredients.
06 - Using a sharp knife, trim the uneven ends of each roll, then slice each log into 6 even pinwheels.
07 - Arrange the pinwheels cut-side up on a serving platter. Garnish with black sesame seeds and extra parsley leaves if desired. Serve immediately or cover and refrigerate until ready to serve.
