01 - In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Add the warm water and olive oil, stirring until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic. Cover with a clean kitchen towel and let rise in a warm spot for 1 hour, or until doubled in size.
02 - While the dough rises, combine the mozzarella, cheddar, Parmesan, cream cheese, minced garlic, parsley, and black pepper in a medium bowl. Mix thoroughly until all ingredients are evenly incorporated. Set aside.
03 - Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
04 - Punch down the risen dough and divide it into 18 equal portions. Flatten each portion into a small circle roughly 3 inches in diameter. Spoon approximately 1 tablespoon of the cheese filling into the center of each circle. Pinch the edges together firmly to seal, then roll gently between your palms to form a smooth ball.
05 - Place the stuffed dough balls seam-side down on the prepared baking sheet, leaving about 1 inch of space between each one.
06 - Bake for 18 to 20 minutes, rotating the pan halfway through, until the bread bites are golden brown and the cheese is bubbling at the seams.
07 - While the bread bites bake, stir together the melted butter, minced garlic, and chopped parsley in a small bowl.
08 - Remove the bread bites from the oven and immediately brush generously with the garlic butter mixture. Sprinkle with flaky sea salt. Allow to cool for 2 to 3 minutes before serving warm.
