# What You’ll Need:

→ Dough

01 - 2 ½ cups all-purpose flour
02 - 1 packet (2 ¼ tsp) instant yeast
03 - 1 tsp sugar
04 - 1 tsp salt
05 - ¾ cup warm water (105–115°F)
06 - 2 tbsp olive oil

→ Cheese Filling

07 - 1 cup shredded mozzarella cheese
08 - ½ cup shredded cheddar cheese
09 - ¼ cup grated Parmesan cheese
10 - 2 tbsp cream cheese, softened
11 - 3 cloves garlic, minced
12 - 2 tbsp fresh parsley, finely chopped
13 - ½ tsp black pepper

→ Garlic Butter Finish

14 - 3 tbsp unsalted butter, melted
15 - 1 clove garlic, minced
16 - 2 tbsp fresh parsley, finely chopped
17 - Flaky sea salt, for sprinkling

# How To Make It:

01 - In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Add the warm water and olive oil, stirring until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic. Cover with a clean kitchen towel and let rise in a warm spot for 1 hour, or until doubled in size.
02 - While the dough rises, combine the mozzarella, cheddar, Parmesan, cream cheese, minced garlic, parsley, and black pepper in a medium bowl. Mix thoroughly until all ingredients are evenly incorporated. Set aside.
03 - Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
04 - Punch down the risen dough and divide it into 18 equal portions. Flatten each portion into a small circle roughly 3 inches in diameter. Spoon approximately 1 tablespoon of the cheese filling into the center of each circle. Pinch the edges together firmly to seal, then roll gently between your palms to form a smooth ball.
05 - Place the stuffed dough balls seam-side down on the prepared baking sheet, leaving about 1 inch of space between each one.
06 - Bake for 18 to 20 minutes, rotating the pan halfway through, until the bread bites are golden brown and the cheese is bubbling at the seams.
07 - While the bread bites bake, stir together the melted butter, minced garlic, and chopped parsley in a small bowl.
08 - Remove the bread bites from the oven and immediately brush generously with the garlic butter mixture. Sprinkle with flaky sea salt. Allow to cool for 2 to 3 minutes before serving warm.

# Expert Tips:

01 -
  • That moment when someone bites into one and the cheese pulls in a long stretch is guaranteed to make you smile.
  • They come together with basic pantry ingredients and require zero fancy techniques or equipment.
  • You can freeze a tray of these unbaked and pop them straight into the oven when unexpected guests show up.
02 -
  • Seal those dough edges tightly or the cheese will leak out and burn on the pan, which I learned the hard way on my second batch ever.
  • Letting the dough rise the full hour makes a enormous difference in texture, so do not rush it even when you are hungry and impatient.
03 -
  • Lightly oil your hands before dividing the dough to prevent sticking and keep the surface smooth for a better seal on each ball.
  • The garlic butter should be brushed on while the bites are still screaming hot from the oven, because that is when they drink it in like a sponge and the flavor penetrates deeply.
