01 - Add the rolled oats and desiccated coconut to a food processor. Pulse until finely ground and uniform in texture.
02 - Add the freeze-dried strawberries, almond butter, honey (or maple syrup), vanilla extract, and salt to the processor. Blend until the mixture is thoroughly combined and sticky. If using fresh strawberries, chop them finely and fold them into the blended mixture by hand.
03 - Scoop out tablespoon-sized portions of the mixture and roll firmly between your palms to form smooth, even balls.
04 - Roll each ball in extra desiccated coconut, pressing gently to ensure an even coating on all sides.
05 - Arrange the coated balls on a plate or tray and refrigerate for 30 minutes until firm. Serve chilled or at room temperature.
