01 - If using ground beef or sausage, cook in a skillet over medium heat until fully browned. Drain off any excess fat and set aside.
02 - Add the cubed processed cheese, cream cheese, and the entire can of Rotel diced tomatoes with green chilies (including juices) to the slow cooker. If using meat, add the browned meat as well.
03 - Sprinkle in the garlic powder and black pepper evenly over the top of the ingredients in the crockpot.
04 - Cover the crockpot and cook on the low setting for 2 hours, stirring occasionally, until all cheeses are fully melted and the mixture is smooth and creamy.
05 - Keep the dip warm in the crockpot on the low or warm setting. Serve with tortilla chips, crackers, or fresh vegetable sticks for dipping.
